We talked about Esther and Purim today in church. I have always like the story of Esther and we have made Hamantaschen in Sunday School before.
Esther was pretty brave to stand up to the king. I know I get scared when I have to talk in front of people…what scares you and how do you overcome it? Sometimes we talk about Esther as a superhero, like we did today. She didn't have magic powers but she used the powers she did have.
We can all be superheroes. Maybe we can't fly or shoot lasers from our eyes, but we can do small things to make the world just a little bit better.
I am going to post one recipe for Hamantaschen. These are triangle shaped pastry filled with something. The name means “Haman’s pockets.” I'm sure you can find other recipes as well online but this one is fairly simple.
Ingredients
- 1 (18.25 oz) package moist yellow cake mix
- 1 cup all-purpose flour
- 2 eggs
- 2 tablespoons water
- Fillings (jam, jelly, chocolate spread, etc.)
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Grease/line cookie sheets.
- In a large bowl, mix together the cake mix and flour. Stir in the eggs and water to a form a stiff dough. On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into 3 inch round circles and place 2 inches apart onto the prepared cookie sheets. Place a teaspoon of filling into the centre of each cookie and pinch the sides to form three corners. Moisten with water if necessary.
- Bake for 6 to 8 minutes in the pre-heated oven, or until lightly browned. Allow cookies to cool for 1 minute on the cookie sheets before removing to wire racks to cool completely.
